Hearty Egg Bake

Looking for an easy breakfast recipe for a busy weekend? I made this one for Valentines Day and it was amazing! This egg bake is super easy and you can make it the night before. This is a nice recipe that you can modify which vegetables to add and which meat you would like as well. It can also simply be made vegetarian by not adding the meat. I liked this because the bread on the bottom makes a nice crust, which also helps when serving to retain the shape.

In 8×8 pan..

4 slices of bread

1 bell pepper

½ onion

4 mushrooms

½ cup spinach

1 cup choice of meat

4 eggs

½ cup milk

¾ cup shredded cheese

Your choice of seasonings

To start:

1. Butter one side of the slices of bread and place in bottom of the pan.

2. Sprinkle ¼ cup of the shredded cheese on top of the bread.

3. Add chopped vegetables

4. Mix eggs, milk and choice of seasonings, pour mixture over vegetables.

5. Add meat and top with remaining ½ cup of cheese.

6. Cover and refrigerate overnight

7. Bake at 350 for 50-60 minutes or until cheese is golden brown

Fighting the Common Cold

Easy White Chicken Chili Recipe

Busy winter? Need an easy meal for dinner? Try this easy white chicken chili recipe. The best part is that you cook it in the crockpot, how easy? I had this chili at a winter get together over the holidays and figured I’d try it out myself and it was just as good! There’s only seven ingredients and you can modify them to your liking as well. Ingredients:

1 ¼ lbs boneless skinless chicken

2 cans great northern beans or navy beans

1 can hominy or white corn

1 envelope taco seasoning

1 can chopped green chilies

1 can cream of chicken soup

1 can chicken broth

To start:

1. Place chicken in crock-pot
2. Top with beans and corn
3. In a medium bowl, combine taco seasoning, chilies, cream of chicken soup, and chicken broth. Pour in to crock-pot.
4. Cover and cook on low for 8-10 hours
5. Before serving, gently stir to break up chicken
6. Top with your favorite toppings

Savings on Winter Heating Bills

A cold cold winter has struck the Midwest this year. Many of us in Minnesota are struggling to stay warm as well as keep up with our energy bills from heating our homes. With a warmer week ahead it is a good time to turn that thermostat down 2-5 degrees. Some may be surprised by how much of a difference that can make in energy savings just from one warmer week. This may be an adjustment to some in their comfort levels. Try these tips to stay warm. Wear a sweatshirt or sweater when you’re at home instead of just a t-shirt. Make sure to wear socks to keep your feet warm.

There are two times during the day to save big on energy bills by just turning your thermostat down a few degrees. First, if you aren’t home during the day turn your thermostat down when you leave for work or school in the morning. Reset it to your comfort level when you return home in the evening. The second time is when you go to sleep. Turn it down once again and put an extra blanket on the bed. Carbon Monoxide Safety

Carbon monoxide is a colorless, tasteless and odorless gas that can be extremely toxic at high levels. It can be emitted from a number of different household appliances that burn fossil fuels. To ensure that you and your family are safe there are two big steps that should be taken for complete protection. First you should install a CO detector. This is just as important as a smoke detector, but senses a different substance. With the installation you should be sure to check it monthly to ensure that the alarm is working properly. The second thing that should be done is have one of WestAIR‘s qualified technicians come and inspect your home heating system at least once every year.
